Ostara Lilac Cider with golden plums and foraged lilac | 2020
Plums and petals are two of our favourite things. Like all ingredients, both are fleeting: transient yet punctual in their annual rhythms. Each bottle of Ostara takes 3 years to make.
This version of Ostara is wild fermented cider (from 2020) aged on golden plums (from 2021) for 8 months, our microflora slowly chewing on the plum skins. To it, we added a lavish amout of lilac flowers which we foraged in and around Guelph, just minutes from our cidery (in 2022)
Ostara lilac is floral at first, with a soft herbal sweetness that beautifully balances the blend. There's a gentle astringency, but we used less lilac stems this year for a richer petal expression. We made just 25 cases.
